GLORY! GLORY!

inspiration for this has come in all different guises,shapes and surprises.. the seeds are not an essential to the overall taste, but as 'life' is created from a seed, which then shoots off into a bulb of its own, i found it appropriate.
so create , consume, and share the love of this little bloom, raise your glasses to glory! glory!





















whats in it
2 stems of purple broccoli
3 stems of swiss chard
3 stems of spinach
chunk cucumber
chunk courgette
1tbsp natural yogurt
1 ripe pear
handful of sesame seeds
ice

SWEET CHERRY BABY

up and at em.. that's me on this foggiest of days in the capital.. I didnt sleep too long mind.. but I'm raring to go.. and today's offering probably reflects my current state of well being..even a few miles on the dark streets hasn' t dampened by enthusiasm for what i hope will be a glorious Thursday!























1 pint of mixed frozen fruit.. mainly dark cherries.. but also cranberries, raspberries, blueberries,blackberries.

1/2 cup of rolled oats

1 pint of rice milk

add milk and oats to a saucepan and bring to the boil

add fruit to the blender with a little rice milk/water and blend.

add oats to the blend and whizz some more.

voila.. serves two. enjoy

LA POMME

a smoothie that's so smoooove.. you'll wonder why you haven't tried it before...I'm aware that most people wont have all the ingredients to hand.. but please try and get them in if you can, as we all know how boring it is following the same recipes daily...something which we never do @ Wallop!





















 whats in it
1 banana
1/2 fresh pomegranate.. seeds only
1tsp maca root
1/2 cup coconut water
1tsp manuka honey
ice

fire all ingredients into blender.. and whizz.. serves two..

and why

banana:
 In the traditional medicine of India and the ancient Persia this golden fruit is regarded as nature's secret of perpetual youth. To this day, banana is known for promoting healthy digestion and creating a feeling of youthfulness. They help promote the retention of calcium, phosphorus and nitrogen - all of which then work to build sound and regenerated tissues. pomegranates:
Pomegranates are a Super fruit.

The term “superfruit” refers to a fruit that's not only nutrient-dense and high in antioxidants, but one that has the ability to affect cell and molecular structure, and the potential to be beneficial to overall health.

Pomegranates are estimated to have three to seven times as much antioxidant value as green tea. Antioxidants are important to the human body because they help reduce the harmful effects of oxidants, or “free radicals,” and can help repair damage already done to cells.

Pomegranates are also high in Vitamin C and fiber, and contain the minerals iron, potassium and calcium. Other nutrients include Vitamin A, Vitamin E and folic acid.

maca root
maca root benefits that have always intrigued people are that it is a nutritious food that gives those who consume it more energy, strength, and endurance. right people.. as I'm on day 3 of my self imposed 5 day detox.. its time for my old pal.. the ' beet' to make an appearance. beetroots are amazing.. not only do they completely over power any juice but they are so good for you.. and i do mean the raw dirty ones, not the ones that have been polished up soaked in vinegar and left on store shelves for decades!!

what its good for

beetroot: containing the powerful antioxidant betacyanin, which gives beetroot its deep red hue, this vegetable purifies the blood and has anti-carcinogenic properties. fennel

Today, fennel is an active ingredient in many combination herbal formulas used to balance hormones in menopausal and premenstrual women. It is also included in some herbal formulas that claim to promote natural breast enhancement.
Fennel has a reputation as an appetite suppressant and promoter of weight-loss. Some studies have shown that fennel does indeed have some diuretic effect, and may help reduce water retention.

This Herb is bombarded with many vitamins and minerals. It contains carotene, the pigment which is part of Vitamin B complex family. It also contains good amounts of Thiamine.
Riboflavin, essential for many biological functions in body, is also present in Mint. Niacin and Folic acid are also present. Folic acid is very important vitamin for women.
It is directly related to optimal hormonal functioning of the body. The mood swings in women can be directly related to Folic acid deficiency. The immune system booster Vitamin C is also present.

SKINNY MINNIE

for my final juice of the day.. i felt all fruity.. like you do..did i fancy a smoothie.. or a juice.. well i fancied a bit of both.. so i knocked up this tasty number, as you can see, it says.. drink me and saviour me..and you will.. every last drop






















1 pear

1 cup rice milk

1/2 cup coconut water

generous amount of fruit ..inc cranberries, cherries, strawberries, raspberries, blackberries

add ice

juice the pear.. add to blender.. and blend the rest.. serves deux.

BRASILIAN

here comes a treat.. we all love treats.. but this one is a healthy treat.. so please indulge to the max






















1 ripe banana

1 cup of coconut water

1/2 cup almond milk

1tbsp raw cacao powder

ice

all done in a blender.. whizz for a few mins to crush the ice.. and serve yourself and a friend.

taste sensation... like no other.. mother.. brother...

CLOUD NINE





























2 apples ( gala)
1 stick celery
1tsp hemp protein
1tsp maca root
1tbsp natural yoghurt
handful spinach
handful purple broccoli
handful chard
2 cabbage leafs

juice the hard vegetables in the juicer.
pour entire contents into blender, add yogurt, hemp and maca, and whizz for a few minutes.

And you have a powerful mostly green juice, that will shake you up, and make you feel a million dollars!!

For the record i use organic produce for the greater benefits, that's not  to say you cant use regular fruit and veg, just scrub it well.

BLUEBERRY HILL





















whats inside:
1 cup of blueberries, fresh or frozen, either or.
1/2 glass of almond milk
1 banana
1tsp manuka honey
ice

 and why:

Almond Milk: better than soya, it contains less sugar for one, lower in calories than cows milk, is lactose free, contains potassium, magnesium, selanse, manganese,vitamin E, its loaded with protein.. plus it doesnt taste like milk, it has a nutty flavour in fact.. its said that 10 almonds contain as much protein as half a pound of meat.

Blueberries:are a natural antioxidant and contain flavenoids, beta carotene, ellagic acid, vitamin A, E, C, fibre, and can improve eye vision.

Banana: rich in potassium. they contain vitamins A,B, C, also iron, fibre, amino acids. they also contain tryptophan which leads to improved moods, they are good for eyesight, healthy bones, bowel problems, blood pressure, heartburn, good kidney function

Manuka Honey : its more than just a sticky treat.Manuka honey is an all curing honey.. good for the immune system, rehydrates the body, sore throats, colds, eye infections, its being used to treat many ailments. for the record i use a 20+ which is a higher strain.

we all need a wakey wakey pick me up in the morning.. and what better way.. than porridge and fruit..hot or cold, it doesnt matter..cos the taste.. is like veeeeeelllllvvvvveeeeettttttt...

take 1 cup of oats..porridge or otherwise.. mix with water / or milk, soya, goat, plain or what have you, and bring to the boil on the hob.

in the blender.. take handful of cherries, handful of raspberries, handful of blueberries...

add the oats to the fruit.. and blend.. velvet morning..serves two

EL FINISHIO..OOOOO....OOOOOOO...OOOOOO

..AND IT SHALL BE DONE..

..pre-soup prep for the la's evening meal..guest in tow tonight..another northerner so ingredients influenced by meeeeee grandads allotment..


















Sauteed some Swiss chard, spinach, leeks, white onion, broccoli and garlic in olive oil, sea salt and black pepper..20 mins..Wallop!

Boiling up some sweet potato and Maris-piper potatoes in veg stock and crushed coriander seeds until soft..20-25 min's should do it as I'm making enough to feed half of Camden..will freeze theirs though as they don't eat..:)

Leave to rest for 20 Min's and then blend..you can put in a low-fat creme fraiche or natural yogurt if you like..

End results comin' up this evening..

CHOC - N - ROLL






















2 tsp raw cacao powder

first time we have done this at Wallop.. but i must say.. its a taste sensation!!
The cacao, the banana, the yoghurt, the honey, even the goats milk..
its all bonza wonza

Everyone is aware of the need to eat our greens on a daily basis.. the greener.. the better..
well this morning, we have taken it literally.. and gone for a 99% green juice, with the only thing not green, the apple, and that's just to sweeten it up a tad.

In this bad boy of juicy-ness is :

2 florets broccoli
handful of chard
handful of spinach
stick of celery
chunk of cucumber
ice

After consumption, and within 20 mins people as its a living food, the brain and the body will feel alive, you'll get all giddy, people will think you've gone mad..

IT'S WORKING FOR ME, WHY CAN'T IT FOR THEE?..

Sooooo..Matt's takin' time out of the kitchen to spend 3 days on a juice-tox..goes a little something like this..

- morning workout consisting of the Jump, Jap and Juice programme (see earlier post titled Jump, Jab and Juice) only now I add in 60 crunches (sit-ups) as well..

- reward with a juice (designed by the master blender himself, PG) and then a midday Matcha Green Tea..

- late afternoon I have another juice, or wizz up a soup made purely of vegetables and sometimes some fruits too..just as easy as the juicing with only a little cooking time required and it does help combat that little shithead devil-craving you get inside for some of the nastier foods you might still want to have a nosh on..

- next up an early evening Jump, Jab and Juice sess (with the crunches/same as this morning)..you'll be a bit fooked after this so finish the day with a long hot shower, wind down, sit back and relax with another Matcha Green tea and chill the night away..

- one thing I always do is to try and push myself a little more each day..5 more crunches, another couple of minutes on the punch bag, 150 bounces on the trampoline instead of 125..that sort of thing..it gives you a little goal each day and you will feel the benefits..

In true Wallop style this is all a little bit made up but..

'it's working for me, why it can't for thee!!

Walnut and Pineapple..loaf.

Pre heat oven to 180 degrees
I tend to use the same formula for the right texture so........
2 cups of wholemeal flour (organic)
1 cup of white flour ( organic)
1tsp bicarbonate soda
2tsp cream of tartar
pinch of salt
handful of dried pineapple cut up into small pieces
handful of walnuts.. again cut up for an even spread
mix everything together















add to contents to silicone loaf tin,  ( glaze with an egg ) then wallop in the oven for 60mins.. stick Elvis on the stereo and make a cup of matcha green tea..then...wait for the magic to happen..when baked.. leave to cool on a wire rack or cover with a tea towel for 2hrs or so.

PINK FROST




















in the juicer

one whole raw beetroot
one stick celery
half of a lime
one whole carrot
one apple

in the blender
one banana
and a quarter cup of soya milk

whizz all together.. and its mizz pink frost.. consume immediately

and here's a little something i prepared earlier
















ginger bread

so its basically 3 cups wholemeal flour, 1 cup of white flour
1tsp bicarbonate soda ( as i dont use yeast)
1+1/2 tsp cream of tartar
pinch of salt
1 stem of crystalized ginger, finely diced.
1 egg for glazing

mix all ingredients.. add to silicone dish, beat the egg.. and brush over the mixture..whack in oven at 180 degrees for 60 mins.
remove and cool or 1 or 2 hrs.. then serve with anything you desire

DAILY BREAD..




















weekend loaf.. very simple to make, better than any shop bought one..

whats in it

3 cups of organic wholmeal flour
1tsp bicarbonate soda
1tsp cream of tartar
pinch of salt
buttermilk and sour cream are all optional.
1 egg for glazing

pre heat oven to 180 degrees
wallop the mixture in a suitable silicone tin
stick in oven for 60 mins.
when done.. and hollow sounding.. remove and lay on rack or cover with clean tea towel for 2hrs.
Enjoy with anything, butter, marmalade, jam, cheese etc etc.

yesterday i was running around the North of England.. good time had by all, but a late one in terms of getting back to the HQ.. and bed. So today a pick me up is in order to replenish the body, the mind and of course the soul..

so today i have gone for the jugular.. the taste is amazzzzzzziiiiiiiiiiiiiiiiiiiinnnnnnnnnnnnnnnng!

HE'S GONE, GONE TO NORTHERN PASTURES AND WHAT'S MORE..

..Pauli's gone to the hallowed turf of MY team, MY beloved, the mighty and one only team that Pele, Maradonna or Cruyff would ever have thought about joining, the TRUE reds of the north of England..

In the meantime, we have a guest over from Ireland today..dear Jamie will be filling the boots of juice man (whilst up north juice man is polishing the boots of another chap who's name begins with 'J'!!!)..

..WOW at WALLOP!!!!!


















..oh yes my babies, oh yes, oh yes..albeit temporarily, the crown returns..here's why -

BEETROOT SOUP, GRILLED PORTOBELLO MUSHROOM, POACHED EGG..I ain't gonna title this with anymore lingo..just tell you what I did..

..boiled up 3 whole beetroots (with all the beetroot stalks), 3 maris-piper potatoes, carrots, white onion, leek, fennel, star-anise, ginger, crushed carraway seeds, grated the zest of a whole orange and then squeezed in the juice, sea salt and black pepper..let it come to the boil and then simmer for 3 hours..once it's settled leave it to rest for half an hour then either blitz with a stick blender or put into a blender and blend!!

...wanted to add something a bit different so I grated some garlic into a portobello mushroom, drizzled over the top a little olive oil, sea salt and black pepper then grilled for 6-7 minutes..

..poach one egg in water and a little white wine vinegar..

..pour soup into large round bowl, float the mushroom in the middle and put the poached egg on top..finish with a little cracked black pepper, a drizzle of double cream and wallow in pure, uncensored food lust and if you have the energy after you've finished, I would highly recommend you drop your pants and play with yourself for a while but I promise you it won't be as enjoyable as eating this..

JUST FOUND OUT HE'S CHEATING ON US...

2. make something up that is both inspired, delicious and a visual delight..tonight I think I've come up with something is basically a little bit of genius..

Desssssseert

Well peeps after Matt graciously conceded that his dish, tho beautiful in looks, garnishes and taste didn't quite compare to the " purple rain' smoothie.. and frankly.. well.. yes.. i will accept the victory for tonight and leave you with our lingering dessert.. no pictures on this one, as its a slice or three of yesterdays walloping treacle and ginger loaf with real butter and home made lemon marmalade.. mmmmm

Matt and I shall resume our friendly rivalries tomorrow only @ wallop!!

..TO CONCEED, OR NOT TO CONCEED THAT IS THE QUESTION..


















..however, I feel a begrudging acceptance of defeat is in order tonight..I will start with the menu, and then discuss -

Sweet Cured Scotttish Mackerel, Pan-Fried Spinach, Oven Roasted Baby Tomatoes with an Apple, Fennel and Potato Dauphinoise

Now, the thing is the meal was, in all honesty, a great success..delicious, in fact!!..however, from my now professional and critical point of view I would have served this dish with a nice thick lump of Cod, and not the mackerel as it slightly overpowered the beautiful, aromatic and subtle sweet combination of apple and fennel in the dauphinoise potato, and the contrasting tangy ness of the slow cooked tomatoes in balsamic vinegar, brown sugar,black pepper and salt..

For this reason alone, I will concede defeat to Pauli's earlier sublime example of the soon to be famous Purple Rain smoothie..roll on tomorrow when battle will commence once more.

..BAD MOODS..!

..Matt returns after a bit of a hard day..with that in mind there's a bit of aggression in tonights dish. However, one thinks a flavour feast is on the cards as he tries to dethrone (for this evening only) his partner in crime, his smoothie mentor and the self-styled god of all that isn't a solid..the man, Paul Gallagher! Prepare to be defeated..menu coming up..!

PURPLE RAIN

 




















2 organic bananas
A generous handful of blackberries, strawberries, blueberries, cranberries..frozen or fresh.
1tsp manuka honey
2tbsp soya yoghurt
1/4 Pint of soya milk
Ice

Bang into blender.. blend till smooth.. serve.. Wallop!

While the Chefs away.. Juice man shall play at Delia


















Look whats in the fridge.. and create.. thats the Wallop way!!

Tonight I have some Scottish Smoked Mackerel ( nice and oily, extra omega oils.. boom-boom )
Wild Rocket
Baby Spinach
West Country Blue Stilton
Juicy Pear
Lime
Coriander
Celery

And this is what I'm doing.. ooh exciting

3 thinly cut smoked mackerel strips.. naturally very oily so bang in pre heated pan as is for 8 mins or so, then make the dressing.. which consists of a freshly squeezed lime, some diced coriander, a grated celery stick and some balsamic and olive oil.. so whizz all that together.. and :-)
Rinse some Rocket and Spinach, then slice a couple of slices of West Country Blue Stilton, wash the Pear and slice 2-3 thin strips.. nice and juicy and raw.. yum!
Make the bed of Rocket and Spinach
Place the Pear and Blue Stilton on top
Stack the now cooked mackerel and garnish with the dressing..
Go to stereo and select a tune.. lets have something old skool...
And its 'I'm in a Jam' by Derrick and Patsy.
Wallop.. done.. now to dine in the dark ( apologies for the pic)

WALLOPING TREACLE AND KICKING GINGER BREAD
















3 measuring cups of Organic Wholemeal flour
1tbsp Soured Cream
1tsp Bicarbonate Soda
2tsp Cream of Tartar
2tbsp Black Treacle
1 good squirt of Agave Syrup
2 cubes of grated Stem Ginger
And water of course.

Mix all ingredients together.

Wallop into suitable silicone dish / tin

Bang in oven on 180 degrees for 50 minutes

Remove and let cool on suitable rack or / and cover with tea towel

Don’t eat straight away, let it form and take shape.

Enjoy!

Serve warm or cold with REAL butter none of that mamby pamby useless spreadable low fat highly sugared and HIDDEN additive,HIGHLY addictive stuff everyone throws at you.

A SUCCESS!!!


Spice Crusted Yellow-Fin Tuna Loin, Sauteed Asparagus and Mushrooms and Shaved Organic Pear..
















Matt nailed it tonight..oh yeah baby...get this for a random put together -

Crushed up some cumin, coriander, sesame seeds, chilli, black pepper corns, sea salt to make up a spicy crust for the fresh tuna loin..very subtle on the spice and very, very delicious!! Pan-fry for about 1 minute each side so it's rare and leave to rest whilst...

..I sauteed organic mushrooms and asparagus in butter, a little white wine, garlic and a small amount of brown sugar..

..but the highlight, of the meal..a simple PEAR - BIG and JUICY, thinly sliced and served (uncooked) on top of the mushrooms and aspsragus..it brought the whole meal together..really sweet and fresh taste with every bite..complimented the spice of the tuna crust and the subtle richness of the asparagus and mushrooms sooooooo well..

finished off with a big handful of chopped parsley..completely made up on the spot..
job done..WALLOP!!!

Matt's in the kitchen again..we've got some tuna in't fridge fresh from east finchley's finest fishmonger..right, I'm looking in the fridge for some inspiration..what to do, what to do?

..best way to teach yourself to cook..look in your fridge or cupboard, see what there is and make something up..WALLOP! will post what I came up with tonight in a riddle!

Morning health nuts.. Matt seems to have temporarily disappeared, if anyone's seen him.. send him back to base camp would ya.
As you can see from the above picture i just couldnt wait to get my morning goodness, so i posted the aftermath of breakfast instead..

One in t'oven














Paul ere.. Tonights offering is not Juice, Smoothies or Food, well it is.. But i decided to knock up a loaf in 60 mins. No bread machine, just fine handiwork, and a little patience is whats required.
Anyone can make a loaf of bread, its fairly easy once you get the hang of it.. Anyhow.. This is whats inside this 'lil' beauty
.
3 Cups of Organic Wholemeal Flour
1 cup of Organic White Flour
1tsp Bicarbonate Soda
1tsp Cream of Tartar
200ml Buttermilk (optional)
1/2tsp Salt
200g of Currants
1 Egg ( Glazing)

Preheat oven to 200 degrees
Mixing bowl+ spoon

Add wholemeal flour, add white flour, mix ingredients by hand.Add currants and mix again, add buttermilk and mix again, add bicarbonate soda, cream of tartar and salt and mix again, add water and mix yet again.

Bring mixture back out of mixing bowl and sift with additional flour until a dough is formed.
Add mixture to pre warmed silicone tin.
Mix organic egg in cup.. take a pastry brush and glaze over the top of the loaf.
Pop in pre heated oven for 60 mins, then remove and cool on tray for 1-2hrs.

Voila!!! one walloping loaf.. with no added shmuck or unhealthy ingredients.

JUMP, JAB & JUICE..

MATT'S recommended twice daily routine..mornin' and night baby, mornin' and night..read on!

JUMP - 100 bounces on mini trampoline just to loosen up all the muscles in your body..heart rates up..niiiiice!

followed by -

JAB - 10 minutes of light boxing on the punch bag (doesn't sound a lot at first but I guarantee you will feel it after only 2!!)..at the end give the bag a couple of good WALLOPS just to get rid of that last bit of tension...the feel good factor works a treat at this point!!

followed by -

JUMP - back on the trampoline to warm down..100 bounces..feel the bad boy fat bounce away and off down the road to somebody who wants it!!

finally -

JUICE - your little reward at the end..just follow the recipes - we  are working on understanding our nutrient charts - what is good for you, why it's good for you, what goes with what and when you should have it.. We'll keep you updated..when we know it's right, we'll give you the info you need..
