PUMPKIN JALFREZI
matt went on a cooking mission last night and then crashed so i didnt get the chance to catch up with him regarding his ingredients.. needless to say it was damn tasty..tho i do have the evidence.. if not the recipe as yet.
sauteed a white onion and garlic in olive oil and butter
add 1/4 jar of curry paste to the onions and garlic, stir in for 2/3 mins then add
diced pumpkin.
add the following, crushed cumin seeds, ground coriander,turmeric,paprika,ground nutmeg,sea salt, black pepper.
then add sliced courgette and whole can of coconut milk, gently simmer for 30/40 minutes, add good handful baby spinach leaves.
then stir in two tablespoons of natural yogurt with some wholegrain basmati rice..and garnish with 1/2tbsp yogurt.. serves 4-6.. Wallop!

ROAST PUMPKIN & PEAR SOUP
Matt decided to purchase a Pumpkin.. i think he wondered what it was when he seen all the Mums purchasing them for the forthcoming halloween celebrations, so he was feeling a little left out.. he decided not to cut it up and stick a candle in it but create something wonderful from it..
1 small pumpkin
4 pears
2 potatoes
heat oven to 200 degrees
cut pears into quarters and roast in a little butter, sea salt & black pepper
take the pumpkin , cut the skin off and cut into wedges
roast in a seperate dish along with a little olive oil, agave syrup, nutmeg, salt and black pepper and roast for around 45 minutes.
on the hob boil up water and add the potatoes, 1500ml of vegetable stock and leftover pumpkin to thicken
add the roasted pumpkin and pear to the stock and then put through the blender until smooth.
rest for 15 minutes before serving. enjoy.. crash-bang-wallop
serves 4

Tuesday loaf
i'd like to say something fantastic about this creation.. but the reality is.. its just a loaf, that anybody can make, if you have an oven.. a bowl.. some flour, bicarbonate soda, salt and patience..
Enjoy with soup.. or anything..
ROASTED WILD TROUT with a TROUT AND LEMON ZEST MOUSSE and PAN-FRIED SWISS CHARD STUFFED WITH MINTED MASHED NEW POTATOES
what to do with a trout..?
ROASTED WILD TROUT with a TROUT AND LEMON ZEST MOUSSE and PAN-FRIED SWISS CHARD STUFFED WITH MINTED MASHED NEW POTATOES
Take said gigantic trout, gut and clean then roast in the oven with fresh lemon, black pepper and sea salt..remove after about 35-40 minutes and leave to rest..
Take off half of boned flesh and blend with a little cream, natural yoghurt, lemon zest and juice, flatleaf parsley, season and Wallop you have a beautiful light mousse..
Boil up some new potatoes in a pan of hot water, fresh mint leaves, veg stock and chilli flakes..when cooked take out the stalks and mash..then add your own homemdade fresh mint sauce..mine was with fresh mint, white wine vinegar, refined brown sugar and a little grain-mustard..
For the money shot - panfry a large leaf of swiss chard in olive oil for about 15 seconds and then stuff this with the minted mash..AMAZING!!
Serve with a little of the roast trout and you have a delicious meal for the neet lars and lasses!!!

1 glass of vita coco coconut water
1 cup of rasberries
1 cup of cherries
1 cup of cranberries
1 cup of blueberries
handful of crushed ice
juice the apple and the pear
blend the coconut water, raspberries, blueberries,cherries,cranberries and the ice
add all ingredients together..
serves 2

CHAOS
oh lord.. this is a random juice, intensely green, dark green, the very best vegetables that make everything in your entire system work.. and work with a great energy.

GOD HAS JUST BEEN ON THE BLOWER..HE SAID IT'S WHAT THEY EAT IN HEAVEN AT HALF-TIME AT THE GAME..!
..easiest little snack you will ever make..5 mins max prep time..10 seconds to gobble..!!
..toast some wholemeal pitta bread, cut it in half and stuff with chopped organic tomato, organic flatleaf parsley, organic cucumber, organic french goats cheese, olive oil and balsamic vinegar, sea-salt and cracked black pepper..
Wallop tip - put all the ingredients into a bowl and give 'em a good mix, then stuff!
It sounds boring and you might say that you aren't gonna waste yer time, but let me tell you this -
..God has just been on the blower, he said it's what they eat in heaven when it's half-time at the game!!!

TRAFALGAR
inspiration from this taste of heaven has come from many zones.. with one item purely on my mind, one train of thought consumes me, and thats TRAFALGAR, the album by the band the Bee Gees that was released in 1971.. its reflective and intensely passionate, i'd like to think this juice reflects some of its divine qualities..
